A secret Boeger family recipe. I’ve made it gluten-free. Shhh…‘Tastes Like Fried’ Baked Chicken
What you’ll need:
1/2 stick of butter
1-1.5 lbs Bone-in, skin-on chicken drumsticks or thighs.
Salt & Pepper
Ginger
Paprika
About 1/2 cup cassava flour
To make:
Salt, salt and then salt chicken! Shake on some pepper. Sprinkle generously with ginger and paprika to taste. Coat in flour.
If baking, melt 1/2 stick of butter in glass baking dish. Place chicken skin side down in dish. Bake for 45 minutes at 400. Then flip and bake for another 15 minutes.
To grill, heat cast iron skillet on stove and melt 1/2 stick butter. Place chicken skin side down in skillet. Transfer to preheated grill. We cook on low (about 400-450) for half hour with grill closed. Then flip chicken and cook for 15 minutes more.
